Russell Smith recently joined the NCDEA and will be conducting the Cheese Sensory and Judging short course to commence in April this year as well as being involved in some teaching of Diploma of Food Science and Technology students.

Short Courses in processing
The NCDEA in Werribee regularly offers dairy technology short courses open to the general public, industry and current NCDEA students. In 2010 several short courses will again be on offer.

Practical Cheesemaking
An all practical Cheesemaking week. Participants do all work under careful supervision, preparing starters, standardising and pasteuring milk, making many cheese styles.
