PROFILE - Russell Smith

Russell Smith recently joined with the NCDEA in conducting the Cheese Sensory and Judging short course as well as contributing teaching in the Diploma of Food Science and Technology students.
Russell comes with a great deal of experience in the dairy industry and has particular expertise in cheese grading and judging. For the past 15 years Russell has been involved at the consumer end of the dairy industry. As a retailer and distributor in Canberra he forged a reputation as an advocate for the Australian dairy industry. He has been judging dairy products in the major competitions in Australia since 1998. He has been deputy chief judge for the Australian Grand Dairy Awards since 2004. He is the chief judge for the RNA Cheese & Dairy Show in Brisbane as well as the Chairman of Judges for the Royal Queensland Food and Wine Show. This year he has been appointed Master Judge for the New Zealand Cheese Awards and chief technical judge for the Sydney Royal Show.
He continues his work in cheese education for the restaurant industry as well as the general public through his association with his cooking school in Canberra. He is a contributing editor to Australian Regional Food Magazine and its website as well as having a regular food program on ABC radio in Canberra.
